Celebrate Radio Day FEB 13, 2015

DIANE'S CORNER ... Celebrate Radio Day

Before the internet, many people relied on the humble radio to deliver their daily dose of news, entertainment and important weather updates. This was especially true for poor or remote communities who didn’t have access to television or other means of communication.
UNESCO formally announced the formation of Radio Day in 2011, after a suggestion put forward by Spain to celebrate this important means of communication. In some parts of the world, radio still remains an important lifeline to the outside world.
In remote farming communities in Australia, children learn their school work through radio. In poor communities in Africa, villages gather around the radio each evening to keep up to date on national news and hear music and speeches. Radio has been superseded by the internet and satellite communications for large parts of the world, but for millions of less fortunate people, radio is still a miracle of technology.

One Giant Keep for Mankind

When Neil Armstrong returned from his famous moon walk in 1969, he brought back some souvenirs of the trip—and apparently kept them in a closet in his home until his death in 2012. That’s where his wife discovered the camera that recorded the landing and two waist tethers, objects that Armstrong called "just a bunch of trash" in the Apollo 11 mission transcripts. This "trash," which was supposed to stay in space, is now on display at the Smithsonian National Air and Space Museum in Washington, DC.

If You Were Born Today, February 13

You work very hard for the things that are important to you. You instinctively appreciate what you have and that it might not be there tomorrow. While this could translate to nervousness or perhaps pessimism, especially when it comes to money, many of you are simply determined, proactive, hard-working, and realistic. You are highly intelligent and intuitive. Others can rely upon you. Famous people born today: Peter Gabriel, Kim Novak, Stockard Channing, Jerry Springer, Mena Suvari.

During a milder February day in Alberta, Canada,  P. Vaudry went for a hike along the Bow River in Fish Creek Provincial Park. “While walking through Hull’s Wood, I noticed this northern flicker in a tree. I approached, and the flicker remained still. To me, [it] was thoroughly enjoying the warmth of the sun, so much so that it didn’t seem to notice that I was there.”

CrockPot Crème Brulee Recipe

Oh yes I did! And I'm so excited! Crème Brulee is my absolute most favorite dessert ever. I scour the dessert menu at every restaurant hoping that it will be there. But now I can make it at home---in my most favorite kitchen appliance----without spending $40 on dinner first.

Valentine's Day is around the corner; surprise your loved one with a gourmet dessert that tastes like a million bucks.

The Ingredients:
--2 cups heavy cream
--5 egg yolks
--1/2 cup sugar (baker's or fine sugar is better so the granules disappear)
--1 T good vanilla
--1/4 cup raw sugar (for topping, add later)

The Directions:

Find a heat-resistant dish that fits inside of your stoneware insert. Fit it in, and using a cup or pitcher, pour water around the edges so there is water 1/2 - 3/4 of the way up the sides of the dish. Push it down with your hand if it starts to float up. Take the dish back out. If you have separate dessert ramekins, do the same thing after nestling them all inside.

--whip the 5 egg yolks in a medium-sized bowl
--slowly add the cream and baking sugar while mixing
--add the vanilla

pour mixture into the dish and carefully lower into the stoneware without sloshing water into the dish.

Cover and cook on high for 2-4 hours. If you are using little ramekins, check after an hour; I'm not sure how long they will take. Custard should be set with the center still a bit jiggly. Touch lightly with your finger to check. Unlike an oven, it will be difficult to overcook this. Try not to worry. I cooked the one above for 4.25 hours on high.

VERY carefully (use oven gloves!) remove dish and let cool completely on counter, then chill in the refrigerator for 2-3 hours.

Sprinkle the 1/4 cup of raw sugar evenly over the top of the custard. Move your oven rack to the top rung and broil for 3-10 minutes, checking often. The sugar will boil and brown.

Cool again in the fridge for a few hours - Amazing.- Utterly amazing.

Artist's mandala bowls extol magic of superfoods

Yummy mandala bowl with starfruit and kiwi

After embarking on her "clean eating" journey five years ago, art student Amalia Bussard realized it was only a matter of time before she would combine her love of art and food — and the resulting fruit mandalas are as tasty as they are beautiful.

"My drive to share these food art mandalas with the world stems from a deep desire to inspire people," Bussard explains. "With a little guidance, we are all capable of living a healthy, wholesome lifestyle!"

These meticulous mandalas are comprised of a colorful variety of fruits, nuts, seeds and other garnishes, all of which are usually assembled atop a bed of vegan "nice cream." This homemade ice cream alternative is made from bananas, and according to Bussard, it's "magical and life-changing."

Want to learn how to make your own "nice cream"? Simply drop a frozen banana (and whatever other ingredients you want) into a food processor and blend until it reaches a froyo-like consistency.

Like ice cream, this frozen banana magic melts the longer it stays out at room temperature, so Bussard must work quickly when creating her mandalas. No more than 10-15 minutes is spent decorating and photographing each bowl, or else it will just devolve into a soupy mess.

"This whole process of creating my bowls is meditative and very therapeutic for me, so I tend to do it everyday," Bussard tells MNN. "Not to mention I'm left with a delicious and nourishing meal after I'm done!"

In the bowl above, we have banana-beet-raspberry nice cream topped with kiwi, star fruit, almonds, pumpkin seeds, coconut and cacao nibs.

Continue below for more mandala bowls, or check out Bussard's Instagram, The Wholesome Bowl, to follow her journey as a food artist.
