DIANE'S CORNER .. Celebrate Hug Your Cat Day

Hug Your Cat Day is one of those pleasingly straightforward holidays. Quite simply, it is a day in which cat owners everywhere are encouraged to hug their cats. The more dedicated amongst them will not need this encouragement, of course, but it is always good to be reminded of our feline friends.
The obvious downside to the day as that people without cats may be left out. This need not be the case, however – it should be straightforward enough to simply adapt it into “Hug Someone Else’s Cat Day”.
So, whether or not you are the proud housemate of a purring kitty, Hug Your Cat Day is the perfect excuse to put a bit of warmth and companionship into your life. No matter what’s going on around you, no matter how bad or troubling things get, you can always count on your furry friend to be there for you.

History

First Pulitzer Prizes Awarded (1917)


The Pulitzer Prizes—prestigious awards presented annually by Columbia University for achievements in American journalism, literature, and music—were created by journalist and publisher Joseph Pulitzer, whose will funded the establishment of Columbia's school of journalism as well as the prizes. Ironically, Columbia had rejected donation offers from Pulitzer during his lifetime because, as one of the originators of yellow journalism, he was regarded as unscrupulous. 

Heinrich Wieland (1877)


Wieland was a German chemist who received the Nobel Prize in Chemistry in 1927 for determining the molecular structure of bile acids, which are produced by the liver. His work provided insight into the mechanism by which bile acids aid in the resorption of food in the intestines and led to the establishment of the close relationship between cholesterol and the bile acids

Tonga Emancipation Day


June 4 is a national holiday in the Kingdom of Tonga, celebrating its full independence from Britain. On June 4, 1863, King George Tupuo I abolished the system of serfdom in the island nation of Tonga. The historic occasion is remembered on Emancipation Day, which is celebrated just after the conclusion of the annual three-day Ha'apai Festival. The Ha'apai Festival begins on Tonga's outer islands and ends on Lifuka Island on June 4th. Both the festival and Emancipation Day are marked with feasts and dancing.

The monastery is the world’s largest Tibetan Buddhist academy, with tens of thousands of male and female attendees. According to Jing Wei, the impressive site is worth visiting “to experience the peculiar landscapes and local life of the people there.”

Vegan Banana and Coconut Ice Cream


The coconut milk and banana give this ice cream recipe a wonderful full flavor. And if you don’t have an ice cream maker, don’t fret! Ice cream is still achievable, though you will have to set an alarm and mix it by hand every 30 minutes or so. If you do this, you will be met with a creamy ice cream. Send summer off with this light and creamy vegan treat!
Vegan Banana and Coconut Ice CreamServes 6-8
1 tablespoon vegan light brown sugar
1/2 cup unsweetened or sweetened coconut flakes
3 bananas (1.5 lbs), peeled and sliced
1 (15-ounce) can full-fat coconut milk (not light)
2 tablespoons vegan white granulated sugar
Pinch of sea salt

1. Preheat the oven to 400? Fahrenheit. Place slices of banana side by side in a casserole dish or parchment-lined baking sheet. Top with brown sugar. Bake for 15 minutes or until the bananas are soft and caramelized. Cool for 5 minutes, until you’re able to handle them. Spread the coconut flakes on a clean parchment-lined baking sheet. Bake for 10 minutes or until lightly golden brown. Remove and set aside.
2. To the jar of a blender, add the coconut milk, bananas, sugar and pinch of salt. Blend until completely smooth, about 1 minute. Give it a taste and adjust the sugar accordingly.

3. Transfer the mixture to a 9 x 12 (the size can vary) casserole dish and cover with plastic wrap. Place in the freezer for 30 minutes. At the 30 minute-mark, open up the freezer and give the mixture a whisk, being sure to break up any of the frozen bits. Repeat this step every 30 minutes until the ice cream is nearly frozen, about 3 to 4 hours. With the last whisk, sprinkle the ice cream with the toasted coconut flakes. Freeze for an additional hour or overnight.

CrockPot Chipotle Chicken with Sweet Potatoes



This was a fun dish to prepare because I had no idea what I was doing. I completely made it up. And not only did it cook nicely in the crock, it tasted good - always an added bonus.

The Ingredients.
--enough chicken pieces to feed 4
--10 oz package of mushrooms
--1/2 chopped onion
--3 cloves minced garlic
--1 small sweet potatoes (peeled and chopped in chunks)
--2 green onions, chopped
--1 diced red bell pepper
--1/2 cup chicken broth
--1 t chipotle pepper
--1 t paprika
--1/4 t black pepper
--1 cup sour cream (to add later)
The Directions.
Add the chicken to the crockpot. I used frozen breast tenders. Prepare the vegetables and add on top of the chicken. Put in the broth, and add the spices. Cover and cook on low for 6-8 hours, or until the chicken is done and is beginning to shred.
Before serving, stir in the sour cream. If needed, heat on high for 30 minutes to bring back to desired serving temperature.
Serve over pasta or brown rice.
The Verdict.
This is a wonderful dish. The heat from the chipotle is nicely mellowed by the sour cream and the sweetness from the sweet potatoes. I would serve this to company---very yummy. My kids ate this, but I did separate the chicken and the mushrooms for them, and gave them the rice in a separate bowl.

Dutch designer Jeffrey Heiligers’ latest clothing line – ‘Posture’ – targets people who spend most of their time hunched over a computer. By preventing the wearer from slouching, the clothes help people improve their posture in the long run. The concept is simple – every time you slouch, the shirt will tighten uncomfortably around the back, forcing you to sit upright again!
“I engineered a tailor-made remedy that corrects poor posture, nowadays very common amongst the digital generation, not by constraining the muscles, but by training them,” Heiligers told Dezeen magazine. “Posture offers a solution integrated in the clothes you wear. By repositioning the seams in such a way that they start to feel uncomfortable when hunching, it stimulates you to sit up straight.”
