DIANE'S CORNER ... Celebrate Wiggle Your Toes Day

Wiggle Your Toes Day is an excellent opportunity to let your tootsies see the daylight and indulge in some public wiggling adventures. With so many opportunities to let those ten little piggies get some action, Wiggle Your Toes Day means it’s time to plan something special to celebrate. Whether you chose to wiggle alone, or use the occasion as a chance to join with like-minded friends, family or colleagues in a glorious session of communal wiggling, no one can afford to let the day go by unmarked.
There are numerous ways to show your support for Wiggle Your Toes Day; sandals at the office are an obvious start, with some discreet toe flexing getting your digits limbered up for the rigours of later wiggling. Why not plan a group wiggle at a lake or beach? Simply dip those feet in the water and luxuriate in a fun-packed toe workout.

Andy Warhol (1928)

RECIPE

30 sec Self Saucing Chocolate Pudding in a Mug

When my 6 year old son asks "what's for dessert Mummy?" and we've just had a roast chicken dinner, who am I to just give him plain vanilla ice cream for dessert? Right? That would just be cruel. I had to satiate this poor little guy's appetite with a nice tummy warming pudding but couldn't be bothered mixing and baking a full size pudding. (And besides, I would just eat the bloomin' lot!)

You've all seen the recipe for the chocolate cake in a mug? Well, this is an actual self saucing pudding. A quick search and I found a recipe for this 30 second pudding in a mug. I'm not sure if its a help or a hindrance. I certainly don't need to know any 30 second recipes for rich chocolate gooeyness. But as a public service, I'm here to share it with you, my lovely readers. You're welcome!


I used your regular sized coffee mug to allow for mixing and spluttering in the microwave. Its so, so easy. Just a matter of spooning in flour, cocoa, sugar and milk. Topping with a sprinkling of cocoa and brown sugar and then some hot water. Zap in the microwave for 30 seconds (although mine needed 40 seconds) and tip out into a bowl. The sauce is sitting at the bottom of the cup.


As you can see in the top photo, I served my son's in a bowl with a few banana chips. Me? I couldn't wait. I just spooned ice cream into the mug. Your dessert dilemma is sorted.

30 second Self Saucing Chocolate Pudding in a Mug

  • 1 heaped tablespoon self raising flour
  • 1 heaped tablespoon cocoa
  • 1 heaped tablespoon sugar
  • 1 and a half tablespoons milk
Topping:
  • 1/2 tablespoon cocoa
  • 1 tablespoon brown sugar
  • 1 tablespoon hot water


  1. Mix together self raising flour, cocoa, sugar and milk in a coffee mug (or other small microwave proof jug).
  2. Sprinkle on top extra cocoa and brown sugar and carefully pour on hot water.
  3. Cook in microwave for 30 seconds. (Mixture should be combined and cooked. If undissolved cocoa exists, zap for an extra 10 seconds.)
  4. Pour into a bowl or add ice cream or cream to the cup.

CrockPot French Toast Bake Recipe

French toast! In the crockpot! While you sleep!

The Ingredients.

--1 whole loaf of bread (I made a gluten-free raisin bread)
--1 dozen eggs
--2 t vanilla
--4 cups of milk (1 used 3 cups of soy, and 1 cup of heavy cream)
--1/4 t salt
--2 t cinnamon
--1/4 cup brown sugar
--1/4 cup walnuts, or other desired nuts (optional. I did not use nuts this time.)

The Directions.

I used a 6 qt Smart-Pot Crock-Pot for this. I'd recommend a 5 or 6qt for this dish. If you have a smaller crockpot, scale back a bit. Maybe only use 1/2 a loaf of bread.

Grease the inside of your crockpot very well with butter, shortening, or cooking spray. Slice your bread into large slices (if it's already sliced, just dump it in) and place the bread into the crockpot.

In a large bowl, whisk the eggs, milk, brown sugar, salt, cinnamon, and vanilla together. Pour on top of the bread.

Cover and cook on low for 6-8 hours. This is done when the bread has soaked up all of the liquid and the egg has cooked (you can tell because you'll see bits of cooked egg stuck to the bread). The bread will expand---it's like one of those spongy foam things that come in the capsules and turn into a dinosaur. Very cool.

After 8 hours, I had a bit of liquid left in the crockpot, but the bread on top was browned nicely and the egg was done. I took the lid off and went hunting for the camera, and then checked email, and then watered the garden. 30 minutes had passed before I remembered that I had left the lid off of the crockpot, and that it was still plugged in. BUT! all the moisture was gone and the french toast was perfect.

so there you go. I'd give that a try.

The Verdict.

Very good! We ate this for dinner, but I will most definitely make it again for a nice family breakfast or brunch.

    I won't ask how long it takes to do one of these posts. It is like browsing thru a magazine. I could watch the cats going up and down the slide--forever! I find the vegetables "disturbing". Better go back to the cats and slide!
