There’s a birthday coming, and it’s an important one for all you paper folding fanatics. It’s the birthday of Lillian Oppenheimer, the founder of the first origami group in America. She also was instrumental in the founding of the British Origami Society and Origami USA. So if you love the art of folding paper and creating beautiful creations from paper, cloth, dollar bills, napkins, or anything that’ll hold a crease, Origami Day is for you!
The art of folding paper arose in several places throughout the world, including Europe, China, and Japan. It has accompanied traditions and celebrations of every kind, including funerals, birthdays, and more. The first actual reference to a paper model is in a poem, which somehow seems appropriate given that such things are traditionally written on paper. In that poem, a butterfly design was referenced in connection to Shinto weddings, but that’s just one of many ways that these designs were used.
In Europe, it was napkin folding that was all the rage, a tradition which was abundant during the 17th and 18th centuries as a sign of being a good host or hostess. Sadly, this particular tradition was going to fade out and become nearly forgotten until recently, when it’s beginning to see something of a resurgence. When Japan opened its borders in the late 1800’s, they started incorporating German paper folding techniques and two worlds came together in a glorious union.
These days Origami has been used as a beacon of hope, with the tradition of folding a thousand cranes being done for people who are in the hospital fighting cancer, for instance.

Veterans Day was founded in Emporia, Kansas, on November 11, 1953. For decades, November 11 was observed in the United States as Armistice Day, the anniversary of the end of World War I. But in 1953 the City of Emporia created a special program to honor all veterans; the U.S. Congress passed a bill changing the name of the federal holiday the following year. In recognition of its role in defining Veterans Day, Emporia celebrates the holiday with 10 days of special events, including museum exhibits, races, essay and poster contests, luncheons, and memorial luminaria.

Wounds heal more quickly if they occur during the day rather than after dark, a study suggests. It found burns sustained at night took an average of 28 days to heal, but just 17 for those that happened in daytime.

Remembrance Day History

Remembrance Day, formerly known as Armistice Day, marks the end of World War I and serves to commemorate all members of the Canadian Armed Forces, past and present. On November 11th, 1918, at 11am, the armies stopped fighting and World War I came to an end for the United Kingdom. As a British colony, Canadians volunteered in the hundreds of thousands to fight alongside the British Forces in Europe. 

In 1921, the Canadian Parliament passed the Armistice Bill which began the Armistice Day celebration tradition. In 1931, the Canadian government renamed November 11 as Remembrance Day in an effort to emphasize the memory of fallen soldiers. Since then, ceremonies, the playing of the  Last Post, the recitation of In Flanders Fields poem, two minutes of silence and poppies over the heart have become symbols of Remembrance Day for Canadians from coast to coast.

CROCKPOT RECIPE
Crockpot Beef Barley Mushroom Soup

Ingredients

⅔ cup barley
2 Tbsp canola oil
1 lb. beef stew or flanken (cubed or in chunks), rinsed and patted dry
2 medium onions, chopped
8 oz. portobello mushrooms, quartered
4 oz. shitake mushrooms, sliced
4 cloves garlic, chopped
6 carrots, washed or scraped and chopped
4 celery stalks, washed and chopped
2 bay leaves
6 Tbsp fresh dill, chopped (reserve 1-2 Tb. for garnish)
2 Tbsp tomato paste
3 cartons beef broth (32 oz. each)
salt and freshly ground pepper to taste (better to salt after cooking as some broths are salty)

Directions

Soak barley in cold water 2-3 hours or overnight. Rinse and drain. Place in slow cooker insert.
Heat oil in large saute or caste iron pan. DO NOT use non-stick surface.
Brown chunks of beef 6-8 minutes on each side, allowing space between each piece.
Place in slow cooker insert.
In the same pan (do not wipe it out) brown onions until golden, 12-15 minutes.
Add all mushrooms, stir and cook over medium heat for another 5-10 minutes.
Add garlic and sauté 5 minutes.
Place all of the above into slow cooker insert.
Add chopped carrots, celery, bay leaves, dill, tomato paste and broth. Season with salt and ground pepper.
Stir to combine well and set slow cooker to LOW and cook for 8 hours.
Remove bay leaves and ladle soup into bowls. Garnish with reserved chopped dill.
